The whisky is a 15 year old Dalmore which has the sweetness of the 12 but is a lot fuller and has more of a spice of ginger to it.

I had a Dalwhinnie at the last bar which was incredibly sweet with honey and heather. This is coming off the bar at our big hotel which had mostly peaty island whiskies so I guess I'm all about sweet whiskies now.
